Default "start Up" Font?

So... I'm designing a label. I save it - I close it. When I re-open it and go to create another single line text object, the font (of the new text object) defaults back to a printer default font.

 

Is there a way to set my start-up default font to something like Arial?

  BarTender always has a bias for producing optimized printer code -- hence the use of a device font by default.  For object default settings I suggest you create objects as per your preference, right click them, and then choose to create as a component in the BarTender ToolBox.  In this way you can have more than one "default" text object type, which can easily be dragged and dropped onto any label.
