How to Lock text/fields in bartender in order to prevent accidental changes.

  This would depend on your version. If you are not using the Starter edition then you could use the Data Entry forms for any fields that need to be changed at print time prompts and have the operators print via the Print Station companion application. Alternatively there maybe a Print Only Password config option in the Administer menu that would require the users to login to change the field values or you could also move the fixed fields to a different/locked layer
