Chinese Font
Well apparently I'm doing this wrong. This font - and others pre-installed, won't show up in Word, Bartender, etc - so I have to assume this isn't a BarTender issue exactly. However, the interesting thing is that the font appears to display correctly in the SAMPLE area of the font selection, but not on the actual label format.
Any experience on this type of issue and solutions to get this to display?

I believe I have the correct characters added by getting the customer to use Chinese Pinyin Input to give them to me - or something. 0 -

Yes, the problem here is you actually have to switch the Regional settings of the OS to Chinese which will allow you to input the Chinese characters. Once you’ve done that, any new input will be in your chosen font. Please note, that BarTender cannot “translate” already written English text into Chinese.
Switching the Regional settings is pretty easy. Just go to the Control Panel and look for Regional and Language settings (it is slightly different based on OS in use). Once you have switched it to a Chinese locale, you will need to reboot the PC. Once it comes back up you will notice a new Icon on the task bar that probably says EN. You can click that icon to switch between input languages on the fly, which will allow you to type in the Chinese characters.
